Chickpea Tikka Masala

Recipe from The Family Freezer

This became my daughter’s new favorite recipe, so I’m excited to share it with you.

This recipe is an easy and cheap crockpot/instant pot meal, works great as a freezer meal, and could be a great pantry meal kit/stock-up meal as well since the ingredients are mostly non-perishable.

Chickpea Tikka Masala

Cuisine: Indian

Protein: Vegetarian

Serves: 6

Ingredients

  • 2 (15 oz) cans chickpeas, rinsed and drained

  • 1 cup frozen peas (or 1 can of peas if using as a stock-up meal)

  • 2 (15 oz) cans of tomato sauce

  • 1 (13.5 oz) can of unsweetened coconut milk

  • 2 teaspoons honey

  • 1 Tablespoon curry powder

  • 1 Tablespoon + 1 teaspoon garam masala

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • serve over rice

Freezer Directions to Cook Later

  1. Label freezer bag/container.

  2. Add all ingredients to the bag/container

  3. Remove as much air as possible, seal, and freeze

Crockpot Directions

  1. Add all ingredients and cook on low for 4-6 hours.

 

Our Recipe Notes:

I used cumin as a direct substitute for garam masala. I admit I’m a lazy cook, so when I was unable to find the garam masala, I found cumin could be used as a substitute. There is a blend of spices you can use with the cumin, but I just used cumin since I had it on hand. We were happy with the results, and that is what I’ve been using since.

I add cayenne pepper and a dash of red pepper flakes for more spice.

We haven’t tried any of these yet, but I think carrots or other veggies could be a great addition if you are looking to add more vegetables and/or stretch the meal further. Pineapples could be good also, especially if you added extra spice to the dish. (I am a big fan of pineapples in dishes.)

We serve this over jasmine rice.
